Reverse searing makes the most sense on a thick, whole-muscle steak. The slow first stage warms the center evenly; the hot finish builds the crust. The method below focuses on heat setup, thermometer placement, the safety floor, and the short window between browned and overcooked.

Why two stages

Cooked direct from the start, a thick steak's exterior is well done long before the center catches up. Reverse searing flips that order: the first stage brings the interior toward doneness evenly while the surface barely colors, and the final sear is short enough to build a crust without overcooking the meat underneath.

The technique earns its time on thick steaks, where the gap between surface and center is widest. Thin cuts cook through too fast to justify two stages.

The USDA numbers to build on

The safety floor comes first. USDA FSIS recommends cooking beef steaks to 145 degrees F measured with a food thermometer, then resting at least 3 minutes before carving or eating - the rest is part of the guidance, not optional. For a medium-rare texture, many cooks pull a thick steak around 130–135 degrees F and let the sear and rest carry it upward; that is a preference target, not the USDA safety minimum.

Choose the finish by temperature, not color: medium-rare is commonly pulled around 130–135 degrees F, medium around 140–145 degrees F, and well-done around 155–160 degrees F, with the final check after searing. Anything below 145 degrees F is a personal-preference choice, not a USDA recommendation, so verify the thickest part with a thermometer.

Stage one: slow and indirect

Start fully thawed; USDA warns that low heat takes too long to thaw meat in place, leaving it in the 40 to 140 degrees F danger zone where bacteria multiply. Season as you like, then set up indirect heat - coals or burners on one side, steak on the other, lid closed.

USDA's smoking guidance keeps the cooker's air between 225 and 300 degrees F, and you need one thermometer for the cooker and one for the meat. Pull the steak a little below your target, because the sear will carry the center higher. Put the probe through the side into the center; from the top, it is easy to stop short and read the warmer outer meat.

  • Thaw completely first; low heat will not thaw safely.
  • Hold cooker air between 225 and 300 degrees F.
  • Track the meat with its own thermometer, not time.
  • Stop a touch under target - the sear adds heat.

Stage two: sear, rest, slice

Sear over direct, high heat, turning often until a crust forms - a matter of minutes on a hot fire. Stay outdoors in a ventilated spot away from structures, use only approved starters with charcoal, and watch dripping fat for flare-ups.

Recheck the temperature, then rest the steak at least 3 minutes before slicing, per USDA guidance; carryover heat keeps working through the rest. Slice against the grain.
